Ingredients (for 8 mats – makes 72 120ml molds):

Mass:

  • 58 sifted egg yolks
  • 2.175 ml milk
  • 14.5 boxes of condensed milk (375ml)

Syrup:

  • 14 ½ cups of granulated sugar (amount needed to caramelize 72 molds)
  • 7 ½ cups water

Preparation method:

Mass: Mix the egg yolks, milk and condensed milk using a whisk. Add vanilla essence to taste.
